Choose
a transparent bell-shaped glass.
Start by looking at the
Benedictine under
a strong non-fluorescent light, if possible,
against a plain background. Hold the
glass
by the stem
and tip it backwards
45° so that you can see the colour
better. |

Swill
the liquid round and round in the
glass. Place your nose over the top and
smell. Then swill the drink around again
and breathe more deeply the second time. |

Pick
out the flavours as you move the
Benedictine gently around your mouth.
Benedictine has a mellow flavour: you cannot
taste tannins or acidity, it is smooth. Next
comes a certain warm vivacity, which gives
the drink a certain roundness.
Having enjoyed the initial flavours of Benedictine,
it is time to turn to the after taste it leaves in the
mouth. |
